I was wondering if AirBnB, or any other hosting platform, requires a minimum age to book? For reasons too confusing to type out, I began thinking about how anyone could book. Obviously, most people who are able to pay aren't doing anything nefarious when they book a vacation, but what's to stop someone who wanted to do something with ill-intent or stupidity? I'm thinking of situations like a child with access to a parent's credit card, a teenager playing stupid pranks with an acquaintances info, etc. I know the verifications help a bit, but lets face it, not much. Is there any over-reaching policy regarding age?

Yes, absolutely, there is a minimum age to book on Airbnb. It is 18. Actually the way Airbnb states it, you have to be 18 to create an account on Airbnb, not just to book but to use the site at all.
I recently had an inquiry from a 16 year old girl from CHina, who wanted to stay in my home for a week for a program at my local university. I had to appraise her of the Airbnb policy on this. Fortunately, she actually stated in her inquiry that she was 16....if she had not, but represented herself as older, and showed up as 16, that could be a serious problem. It's not only a violation of ABB policy to rent to someone under 18, it's also state law in my state that it is illegal to rent property to children, eg anyone under 18 years of age.
Here is what she said in her initial inquiry to me:
I said to her:
I also flagged her message in which she said she was 16, to Airbnb to review, but they have not closed her account as of this point.
