What to do?
My listing clearly says " no pets" but they bring one anyway. What do i do?

Laugh and tell them, "bye, good luck finding another place," at the door.

They hid the dog at check in and we only found out after a while. Can i charge them extra for this?

Point them to a nearby kennel?
You should probably message them through Airbnb explaining that your policy is that pets are not allowed and you have noticed they brought a dog. That way it's on record in case you need to get Airbnb involved.
If you are okay with pets being in there (which I assume you are since you are willing to charge for it), you can discuss this charge with the guest.
If you are not okay with guests bringing pets, you can discuss it with them and ask them to cancel their reservation and leave. Make sure you contact Airbnb to let them know your side.
Also for future reference, I'd change the "Interaction with Guests" to something that will indicate you may be around, or you may not, but that you're always available in case of an issue. We rarely meet our guests but want them to know someone may be around watching the place.

If I found someone had sneaked a dog into my home I would demand that they remove it right away, or I would remove it. This is absolutely unacceptable. Yes, you can charge them extra, but I think it is better just to insist that the dog be taken away.
