How do Yall handle access to your home? Give out a Key? Code locks?

Keys. If I"m going to be there when the guest arrives, or can arrange to get there, I meet the guest and give the guest the key. If I can't be there at the time guest will arrive, I put key in a lockbox and they get it out themselves.
Code locks have an advantage though. The advantage is that there's no issue of lost keys, or you having to worry that a guest may make duplicate keys and come back later and steal things ( unlikely, but people do worry about it). Once a guest leaves you can re-code the code lock to a new code, so that previous guest can't get back in and if they somehow reveal the code to someone (or lose the paper with it written on it and someone else finds it) the code is new so they can't get in.
Disadvantages of code lock -- guest forgets the code. Or is seen by someone else entering the code, or someone overhears them telling what the code is....etc.
